Tofu Takoyaki in a Pan

Introduction
Takoyaki is one of Japan’s most popular street foods, traditionally cooked in a special takoyaki pan. This easy version makes it possible to enjoy takoyaki at home using just a regular frying pan—no special equipment needed.
Instead of wheat flour, this recipe uses tofu and potato starch, making it a lighter, higher-protein alternative while keeping the inside soft and satisfying. Bonito flakes and soy sauce add plenty of natural umami for a simple but flavorful Japanese dish.
Ingredients

- Tofu (silken): 300 g
- Eggs: 2
- Potato starch: 4 tbsp
- Soy sauce: 1 tbsp
- Bonito flakes: 1 tbsp
- Green onions, chopped: As desired
- Octopus: As desired

- Tempura bits: As desired
- Beni shoga (red pickled ginger): As desired

- Okonomiyaki sauce: As desired
- Mayonnaise: As desired

Instruction
- Drain the tofu well before cooking.
- In a bowl, combine the tofu, eggs, potato starch, soy sauce, bonito flakes, green onions, and octopus. Mix well.
- Add tempura bits or beni shoga, if desired.
- Heat a little oil in a frying pan over medium heat.
- Spoon the mixture into the pan to form small pancakes.
- Cook until golden underneath, then flip and cook the other side until golden.
- Top with okonomiyaki sauce, mayonnaise, bonito flakes, green onions, and aonori, as desired.
Tips
• Drain the tofu well for the best texture. For the preferred method, place it on a rack or wrap it in paper towels and drain overnight in the refrigerator. For a quicker method, microwave it at 600W for about 1½ minutes to remove excess moisture.
• No takoyaki pan is needed. Cook the mixture like small pancakes in a regular frying pan.
• For a simple alternative to takoyaki sauce and mayonnaise, try ponzu with green onions or sesame oil with sea salt.
• Bonito flakes contain natural inosinate umami, while soy sauce adds savory depth and complexity. Together, they create rich flavor with simple ingredients.
• Using tofu instead of wheat flour keeps the mixture soft and moist while adding protein and making the recipe flour-free.
