Yaki Udon (Japanese Stir-Fried Udon)

Ingredients

- Thinly sliced beef: 100–150 g
- Cabbage, chopped: 70 g
- Carrot, julienned: 70 g
- Onion, sliced: 80 g
- Garlic, minced: A little
- Cooked udon noodles: 2 packs
- Neutral oil: 1 tbsp
- Bonito flakes: 5 g, or to taste
- Salt and pepper: To taste
Sauce
- Soy sauce: 3 tbsp
- Mirin: 1 tbsp
- Sake: 1 tbsp
- Oyster sauce: 1–1½ tsp
- Sugar: 1/3 tsp
Optional
- Chopped green onions: As desired
- Extra soy sauce or bonito flakes: To taste
Instruction
- Heat the oil in a frying pan over medium heat.
- Add the garlic and cook until fragrant.
- Add the beef, season lightly with salt and pepper, and stir-fry until just cooked.
- Add the onion, carrot, and cabbage in that order. Cook until slightly softened.
- Add the udon noodles and gently loosen them while stir-frying.
- Pour in the sauce, add the bonito flakes, and toss well until the sauce evenly coats the noodles and vegetables.
- Turn the heat to high for about 1 minute, allowing the excess moisture to evaporate and the sauce to lightly caramelize around the noodles.
Tips
• If using udon that needs to be boiled first, cook it slightly shorter than the package instructions so it doesn’t become too soft when stir-fried.
• Don’t overcook the vegetables—a little texture makes the Yaki Udon more satisfying.
• Leftover vegetables in your fridge work well here. Mushrooms, green onions, garlic chives, and bok choy are all great options.
• Thinly sliced pork can be used instead of beef. For a meatless version, try 2 eggs or a piece of aburaage (Japanese fried tofu).
