Omurice

Introduction
Omurice is a classic Japanese comfort food made with savory ketchup rice topped with soft, fluffy eggs. The name combines “omelette” and “rice,” and it’s a familiar favorite in Japanese home cooking and yoshoku (Japanese-style Western cuisine).
This version combines chicken and plenty of vegetables with ketchup-seasoned rice, plus a small amount of soy sauce for extra umami. Ketchup Rice
- Chicken thigh, finely chopped: 100 g
- Garlic, finely chopped: 1 clove
- Onion, finely chopped: 1/4
- Carrot, finely chopped: A few cm
- Mushrooms, sliced: 2
- Zucchini, sliced: A few cm
- Cooked rice: 300–400 g
- Ketchup: 3–4 tbsp (45–60 g)
- Soy sauce: 1/2 tsp
- Salt: A pinch
- Oil: 1 tbsp
Egg Blanket
- Eggs: 2–3
- Milk: 2 tbsp
- Salt: A pinch
- Oil: 1 tbsp
- Cheese: As desired (optional)
To Finish
- Ketchup: As desired
Instruction
- Finely chop the chicken, garlic, onion, and carrot, and slice the mushrooms and zucchini.
- Heat the oil and garlic in a pan over low heat until fragrant. Increase to medium heat, add the chicken and a pinch of salt, and cook until the chicken is no longer pink.
- Add the vegetables and cook until tender.
- Add the cooked rice, 3 tbsp ketchup, and soy sauce. Stir over medium heat until everything is evenly combined. Add another tablespoon of ketchup if you prefer a richer ketchup flavor, then divide the rice between serving plates.
- In a bowl, whisk together the eggs, milk, and a pinch of salt.
- Heat the oil in a small frying pan over medium heat and pour in the egg mixture. Add cheese, if using. Gently stir the eggs with chopsticks as they begin to set. Once they are creamy and softly scrambled, turn off the heat immediately.
- Slide the soft eggs over the ketchup rice and drizzle with ketchup before serving.
Tips
• Use 3 tbsp ketchup for a more balanced flavor that lets the vegetables come through, or 4 tbsp for a richer ketchup flavor.
• A small amount of soy sauce adds extra umami and depth to the ketchup rice.
• Turn off the heat while the eggs are still soft and slightly underdone—the residual heat will continue to cook them.
• Prepare and plate the ketchup rice before cooking the eggs so you can serve the omurice while the eggs are still soft and creamy.
