Garlic Teriyaki Chicken

Introduction

Garlic Teriyaki Chicken is a quick and satisfying Japanese-style meal made with juicy chicken thighs coated in a savory-sweet garlic teriyaki glaze.

Ready in about 15 minutes and made in just one pan, it’s an easy choice for busy weeknights. The rich, glossy sauce pairs especially well with warm steamed rice.


Ingredients

[Servings : 2-3]

  • Boneless chicken thighs: 400 g (14 oz)
  • Potato starch (or cornstarch): 1 tbsp

Sauce

  • Soy sauce: 3 tbsp
  • Mirin: 3 tbsp
  • Sake: 3 tbsp
  • Sugar: 1½ tbsp
  • Water: 2 tbsp
  • Garlic, grated: 1–2 cloves (adjust to taste)

Optional Toppings

  • Chopped green onions: As desired
  • Sesame seeds: As desired


Instruction

  1. In a small bowl, mix together the soy sauce, mirin, sake, sugar, water, and grated garlic.
  2. Lightly coat the chicken with potato starch.
  3. Heat a frying pan over medium heat. Place the chicken skin-side down and cook until golden brown. Flip and continue cooking until almost cooked through.
  4. Pour in the sauce and simmer, turning the chicken occasionally, until the sauce reduces into a glossy glaze and evenly coats the chicken.
  5. Slice and serve with warm steamed rice. Top with chopped green onions and sesame seeds, if desired.


Tips

• Cook the chicken almost all the way through before adding the sauce to prevent the sauce from burning.
• The sauce is intentionally bold because it’s designed to pair with steamed rice. For a milder flavor, reduce the soy sauce to 2½ tbsp.
• Freshly grated garlic gives the sauce the best flavor.
