Warabi Mochi

Introduction
Warabi mochi is one of Japan’s most popular traditional sweets, loved for its soft, bouncy, jelly-like texture. It tastes especially delicious when well chilled and served with kinako and kuromitsu. This easy homemade version uses just a few simple ingredients, but still gives you that authentic warabi mochi-style texture and flavor at home.
Ingredients
[Servings : 2-3]
- Potato starch: 3 tbsp
- Sugar: 2 tbsp
- Water: 200 ml
Toppings
- Kinako (roasted soybean powder): As desired
- Kuromitsu (brown sugar syrup): As desired
Kuromitsu
- Brown sugar: 2 tbsp
- Water: 1–1½ tbsp
Instruction
- Add the potato starch, sugar, and water to a saucepan and mix well.
- Cook over low heat, stirring constantly. As the mixture begins to thicken, continue stirring until it becomes glossy and fully translucent.
- Drop the mixture into ice water and chill for about 2-3 minutes.
- Divide into bite-size pieces and transfer to a serving plate.
- Dust generously with kinako and drizzle with kuromitsu.
How to Make Kuromitsu
- Combine the brown sugar and water in a small saucepan and simmer gently until slightly thickened. (Microwave: at 600W for 40–60 seconds)
Tips
- Keep stirring continuously while heating to prevent lumps from forming.
- Cook over low heat and continue stirring until the mixture becomes fully translucent and glossy.
- Chill the warabi mochi well before serving for the best texture.
- If you don’t have kuromitsu, maple syrup or a light sprinkle of sugar also works.
- This recipe uses potato starch for an easy homemade version; traditional warabi mochi is made with warabi starch.
